White Rose cake is actually a dumpling. A foreign tourist from French coined the name when he visited Hoi An and enjoyed the cake. Restaurant owners liked this name and decided to adopt it. The cake looks simple but the process of making it is not as easy as it looks. The dumplings are made from two small 2″ rounds of rice paper with a small spoonful of meat or shrimp filling in the center. When the rice paper is steamed, the edges get soft and chewy and warp a little, making the dumpling look like a white flower. Ingredients such as shrimp and pork are placed on top the carefully folded noodles and topped with crispy shallot. After being steamed for 10 or 15 minutes, White Rose is served with a sauce made of shrimp broth, a bit of chilly, lemon and sugar.
